This purple maize comes from a chain of small producers located in the regions of Ayacucho and Huancayo in Peru.

Their purple maize cultivation is ancestral, in the purest tradition of plants specifically native to the Andes. 

Purple corn is a variety of corn native to the Andes.

It owes its particular colour and nutritional properties to its great richness in anthocyanins, a purple pigment found, for example, in blueberries, aronia, blackcurrant, and whose interest is unanimously recognized in natural health.

Incorporating purple corn flour into various culinary preparations increases daily consumption of anthocyanins while diversifying recipes.

All this while discovering traditional Andean preparations and drawing inspiration from new ingredients to cook creatively.

In Peru, it is the basis of traditional recipes such as chicha morada (a drink made from purple corn, pineapple and queer), mazamorra morada (porridge to which fresh and dried fruit are added).

This maize is also used by local people to make bread, tortillas, sorbets and various desserts.

The pigments it contains are also used to naturally colour dishes.
